Superfood Smoothie Bites

superfood-smoothie-bites Who ever said that our Superfood Smoothie Mix was just for smoothies? These filling little bites can be made ahead of time and stored in the fridge so that you can get your breakfast or a quick, healthy snack by just reaching in and grabbing a few nibbles. Done and delicious! Makes ~16 balls Ingredients:
  • 1/2 c Superfood Smoothie Mix
  • 1/4 c raw oats
  • 1/4 c shredded coconut
  • 1 Tbsp hemp seeds
  • 2 Tbsp almond butter
  • 1 Tbsp cacao powder
  • 1 Tbsp coconut oil, melted
  • 2 tsp yacon syrup
  • 1/2 tsp vanilla powder
  • pinch pink salt
  • 3 Tbsp water
  • top with shredded coconut and goji berries
  Directions: In a mixing bowl, thoroughly combine the Superfood Smoothie Mix, oats, shredded coconut, hemp seeds, cacao powder, vanilla and salt. In a separate bowl, mix the melted coconut oil, almond butter and yacon syrup. Then mix the dry and wet ingredients together. Add water slowly, 1 Tbsp at a time, until you have a moist consistency. Scoop 1 teaspoon at a time and roll into balls. Coat in shredded coconut and goji berries if desired. Refrigerate and enjoy!
